A good sear is like a one night stand -- if you're lucky, it's quick, likely sizzling, and over before you know it. The only difference is that once you master a sear, you'll want to do it over and over again. All you need is a steak (the thicker the better), salt and pepper, and a blazing hot pan. Brown your steak for 2 minutes per side over high heat, and then transfer to a hot oven for 10 more. Want to get French about things? Top your perfect steak with a pat of this butter.
